Best in both seasons you can have it on your grill in summer or on your stove in cold winter days, it’s great either way. For outdoor entertaining, scoop ice cream into plastic cups and enjoy the nutritious dessert.


2 medium red cooking apples, cored and sliced

1 teaspoon grated fresh gingerroot or 1/4 teaspoon ground ginger

2 tablespoons butter or margarine

3 tablespoons packed brown sugar

1/3 cup apple juice

½ teaspoon cornstarch

2 cups vanilla or cinnamon ice cream


Place a large skillet on grill side burner. In the skillet, cook apples and ginger in butter over medium heat about 3 minutes or until apples are just tender. Stir in brown sugar. In a small bowl, combine apple juice and cornstarch; add to skillet. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more. Cool slightly.

Scoop ice cream into dessert dishes. Spoon apple mixture over ice cream. Makes 4 servings.
