Pears and blue cheese is a perfect tasting pair – this impressively quick and colorful main dish salad can be dressed up with walnuts and additional blue cheese.

Ingredients:

6 cups mixed salad greens [or chopped Romaine]

½ cup bottled reduced-fat or regular blue cheese salad dressing

1¼ cups sliced cooked chicken

1 yellow or green bell pepper, thinly sliced

1 can (15oz.) Lite Sliced Pears, drained

Chopped walnuts, toasted, optional

¼ cup (1oz.) crumbled blue cheese, optional

Coarsely ground black pepper, optional

Directions:

Arrange greens equally on 4 dinner plates.

Spoon equal amounts of dressing evenly over greens.

Top with chicken, bell pepper and pears.

Sprinkle evenly with walnuts, blue cheese and black pepper, if desired.
