DIRECTIONS:

  1. Remove the cheeks from mangoes. Peel and discard the skin. Chop the flesh into 1cm pieces.

  2. Combine the mango, onion, chilli, coriander, olive oil and lime juice in a small bowl. Taste and season with salt and pepper.

  3. Serve the salsa with pan-fried or char-grilled chicken, pork or fish for a light, fresh summer meal.
